Mediatomb UPnP server
The latest issue of Free Software Magazine has some instructions on how to install Mediatomb on a Ubuntu box. With Mediatomb you can stream your media to the PS3 using the UPnP protocol, which allows devices to connect seamlessly and simplifies sharing of media. If there is a compatible UPnP server on the network, the PS3 will automatically detect it.

Nero MediaHome does all this on XP and transcodes 99% of file formats… I’ve not had a problem

TVersity sets up your pc as a media server and does all the transcoding as well(99%).

sudo apt-get install avidemux
avidemux & (or it installs into the applications menu)
A few different settings work (all the mpeg2, DVD, VCD, etc), the auto>PSP one looks terrible so I wouldn’t use that. I put video on MP4 (lavc) and audio on FAAC and format in a mp4 container.
I don’t know what the “auto-transcoding” programs convert to (probably mpeg1), but this will ultimately give you better quality/compression and certainly more options.
2hr movie (40mins to transcode on Athlon 3400+)
700MB 592×256 codec: XVID MPEG-4 video, mp3 stereo audio
to
560MB 592×256 codec: MPEG-4 video, MPEG-4 AAC audio

This is the most reliable UPnP program that I have found for Linux. I have tried twonkeymedia and it did nothing but give me problems.

mediatomb works right away on Ubuntu Gutsy. Interface is no-nonsense HTML page. I too had problems with Twonky, such as displaying a name of one file, but actually pointing to another.
